Stockfish in the manner Corropolese

 
 

Ingredients

800 gr. stockfish, soaked in water
50 gr. blended peeled tomatoes
2 large sweet peppers
100 gr. extra virgin olive oil
parsley and onion
1 red chilli pepper
5 bay leaves
3 cloves of garlic
a pinch of cinnamon
salt and pepper
100 gr. of white wine

Preparation

Cut the fish into pieces, wash and dry them. Fry 1/2 an onion in the oil, add the floured fish cook on a high flame for 6 or 7 ninutes. Pour on the white wine and let it evaporate.
Add the chopped parsley, garlic, 1/2 red hot chilli pepper, bay leaf, cinnamon and cloves together with the tomatoes, diluted with some stock. Bring to the boil the add the sliced peppers, a ladle of hot stock, cover with a lid and let it cook until the fish is cooked, without stirring.
